A colorful and yummy breakfast. Single tortilla servings manage portions that are still packed in vitamins, beta carotene, Omega 3 fatty acids and protein. Enjoy!
- Place corn tortillas on plates
- Heat 1/2 teaspoon olive oil in medium skillet
- Add beans (black or kidney) and chopped onion; Cook 3-5 minutes
- Spoon bean mixture on tortillas
- Heat 1/2 teaspoon olive oil in same skillet and add eggs, sunny side up; cook 3-5 minutes
- While the eggs are cooking, dice the avocado and tomato; add lemon juice, salt and pepper to taste, then spoon on top on tortillas
- Place one cooked egg on each tortilla and sprinkle with cheese and scallions.
