Avocado
1 cup
Scallion
1 cup
Beans

Olive oil
2 medium
Eggs
1 handful
Feta Cheese
1 pinch
Salt
1 pinch
Pepper
Mexican Eggs

A colorful and yummy breakfast. Single tortilla servings manage portions that are still packed in vitamins, beta carotene, Omega 3 fatty acids and protein. Enjoy!

  1. Place corn tortillas on plates
  2. Heat 1/2 teaspoon olive oil in medium skillet
  3. Add beans (black or kidney) and chopped onion; Cook 3-5 minutes
  4. Spoon bean mixture on tortillas
  5. Heat 1/2 teaspoon olive oil in same skillet and add eggs, sunny side up; cook 3-5 minutes
  6. While the eggs are cooking, dice the avocado and tomato; add lemon juice, salt and pepper to taste, then spoon on top on tortillas
  7. Place one cooked egg on each tortilla and sprinkle with cheese and scallions.
